  • Fully cooked bone-in ham (about 8–10 pounds / 3.6–4.5 kg), spiral-cut recommended
  • 1/2 cup honey (preferably raw or wildflower)
  • 1/4 cup packed brown sugar (light or dark)
  • 1/4 cup whole grain Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • Freshly cracked black pepper to taste
  • Optional garnishes: fresh rosemary or thyme sprigs
  • Optional: whole cloves to stud the ham

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels.
  3. Score the surface of the ham in a diamond pattern about 1/8 inch deep. Optionally, stud the intersections with whole cloves.
  4. In a small bowl, whisk together honey, brown sugar, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, and freshly cracked black pepper until smooth.
  5. Place the ham in a large roasting pan, cut side down if spiral sliced.
  6. Using a basting brush or spoon, coat the entire surface of the ham with about half of the glaze mixture.
  7. Tent the ham loosely with aluminum foil and bake for 1.5 to 2 hours (about 15-18 minutes per pound), basting every 20-30 minutes with the remaining glaze.
  8. Check the internal temperature aiming for 140°F (60°C) in the thickest part of the ham.
  9. For the last 10-15 minutes, remove the foil tent to allow the glaze to set and develop a golden crust.
  10. Remove the ham from the oven and let it rest for 10-15 minutes before slicing to allow juices to redistribute.

Notes

If glaze darkens too quickly, loosely cover ham again to prevent burning. Score ham surface shallowly to avoid cutting through meat. Rest ham before slicing to keep it juicy. Glaze can be prepared a day ahead and refrigerated. For a spicy twist, add hot sauce or cayenne pepper to glaze. Maple syrup can replace honey for a different sweetness. Slow cooker method possible for smaller hams.
