perfect lobster tail recipe - featured image

A quick and easy recipe for tender lobster tails cooked with a flavorful garlic herb butter, perfect for an intimate meal for two.

Ingredients

Scale
  • 2 lobster tails (68 ounces each)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional pinch of smoked paprika

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking dish with foil for easy cleanup.
  2. Using kitchen shears, carefully cut down the center of the top shell of each lobster tail toward the tail but don’t cut through the bottom shell. Pry the shell open slightly, then gently lift the lobster meat and rest it on top of the shell (piggybacking).
  3. In a small bowl, mix the softened butter with minced garlic, chopped parsley, chives, lemon juice, salt, pepper, and smoked paprika if using. Stir until well combined and fragrant.
  4. Brush the lobster meat generously with the garlic herb butter, reserving some for basting during cooking.
  5. Place the lobster tails in the baking dish and roast for 12-15 minutes, basting halfway through with more garlic herb butter. The lobster meat should be opaque and firm but tender.
  6. Check for doneness by ensuring the internal temperature reaches 140°F (60°C) or the meat is firm, white, and slightly curled.
  7. Remove from oven and let rest for a few minutes to allow juices to redistribute.
  8. Serve warm with remaining garlic herb butter spooned over the top and a squeeze of fresh lemon juice.

Notes

Do not overcook the lobster tails to avoid rubbery texture. Use a thermometer if possible to check for an internal temperature of 140°F (60°C). Thaw frozen lobster tails overnight in the refrigerator for best results. Butter can be substituted with vegan butter or olive oil for a dairy-free option.
