A simple and luxurious recipe for lobster tails cooked with garlic herb butter, perfect for a quick and indulgent dinner for two.

  • 2 lobster tails (about 6 oz / 170 g each, thawed if frozen)
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper for a subtle kick

Instructions

  1. Preheat your oven broiler to high. Position the rack about 6 inches from the heat source.
  2. Using sharp kitchen scissors, cut down the middle of the top shell lengthwise toward the tail end, but don’t cut all the way through the tail fin. Pry the shell open gently with your fingers, then carefully lift the exposed lobster meat out, keeping it resting on top of the shell (piggybacking).
  3. In a small bowl, combine the softened butter, minced garlic, chopped parsley, lemon zest, lemon juice, a pinch of salt, and pepper. Mix well. Add smoked paprika or cayenne pepper if desired.
  4. Brush the lobster meat generously with about half of the garlic herb butter, covering every crevice.
  5. Place the lobster tails on a baking sheet or ovenproof skillet and broil for about 8-10 minutes until the meat is opaque, firm, and slightly browned on top but still juicy.
  6. Halfway through broiling (around 4-5 minutes), brush the lobster again with the remaining garlic herb butter.
  7. Remove from the oven and let rest for 2 minutes before serving.

Notes

Use softened butter, not melted, for better coating. Watch the broiler closely to avoid overcooking. Let lobster rest 2 minutes after cooking to retain juices. Can substitute parsley with thyme, chives, tarragon, dill, or basil. For dairy-free, use vegan butter alternative. Optional spices like smoked paprika or cayenne add a subtle kick.
