These festive pinwheel cookies are a holiday tradition, featuring beautiful swirls and a delicate balance of buttery sweetness with hints of vanilla and chocolate.

  • 2½ cups (315g) all-purpose flour
  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large egg yolks
  • 2 teaspoons (10ml) vanilla extract
  • ½ teaspoon salt
  • 2 tablespoons (15g) unsweetened cocoa powder
  • Food coloring (optional)

Instructions

  1. In a large mixing bowl, cream together 1 cup (230g) unsalted butter, softened and 1 cup (200g) granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add 2 large egg yolks and 2 teaspoons (10ml) vanilla extract. Beat until well combined.
  3. Gradually add 2½ cups (315g) all-purpose flour and ½ teaspoon salt. Mix until a soft dough forms.
  4. Divide the dough into two equal portions. Place one half back into the bowl and mix in 2 tablespoons (15g) unsweetened cocoa powder.
  5. Wrap each dough portion in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Roll out the vanilla dough on a piece of parchment paper into a rectangle, approximately ¼-inch thick.
  7. Roll out the chocolate dough to the same size and thickness on another piece of parchment paper.
  8. Carefully place the chocolate dough on top of the vanilla dough, aligning the edges as best as you can.
  9. Starting from one of the short edges, tightly roll up the dough into a log, using the parchment paper to guide you. Wrap the log in plastic wrap and refrigerate for about 2 hours or until firm.
  10. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  11. Slice the chilled dough log into ¼-inch thick rounds and place them on the prepared baking sheets, spacing them about 1 inch apart.
  12. Bake for 10-12 minutes or until the edges are just beginning to turn golden. Be careful not to overbake!
  13. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
