Perfect Strawberry Prosecco Float

A quick and elegant summer party drink combining fresh strawberries, chilled Prosecco, and creamy vanilla ice cream for a refreshing and festive float.

  • 1 bottle (750 ml) chilled Prosecco (recommend La Marca or Mionetto)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 pint vanilla ice cream (or dairy-free coconut milk ice cream for vegan option)
  • Fresh mint leaves for garnish (optional)
  • Pinch of lemon zest (optional)

Instructions

  1. Rinse and hull about 1 cup of fresh strawberries. Slice into halves or quarters.
  2. Optional: Chill champagne flutes or tall glasses in the fridge for 10 minutes.
  3. Divide sliced strawberries evenly among glasses, placing them at the bottom.
  4. Using a small scoop or spoon, place a generous scoop (about ½ cup or 125 ml) of vanilla ice cream on top of the strawberries in each glass.
  5. Slowly pour chilled Prosecco (about 5-6 ounces or 150-180 ml per glass) over the ice cream and strawberries, pouring gently down the side of the glass to minimize foam overflow.
  6. Garnish with a sprig of fresh mint and a pinch of lemon zest. Serve immediately with a small spoon and straw if desired.

Notes

Chill Prosecco and glasses well to keep bubbles lively. Pour Prosecco slowly to avoid overflow. Use creamy vanilla ice cream for best texture. Frozen strawberries can be used but may water down the drink. Serve immediately for best fizz and texture.
