  • 45 medium sweet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup brown sugar (light or dark)
  • 2 large eggs, room temperature
  • 1/2 cup whole milk or almond milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Pinch of salt
  • 12 cups mini marshmallows

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish with butter or cooking spray.
  2. Peel and cube the sweet potatoes, then place them in a large pot. Cover with water and bring to a boil over medium-high heat. Cook for 15-20 minutes or until fork-tender. Drain well.
  3. Transfer the drained sweet potatoes to a mixing bowl. Use a hand mixer or potato masher to mash until smooth.
  4. In a separate bowl, whisk together the eggs, melted butter, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt.
  5. Pour the egg mixture into the mashed sweet potatoes and mix until fully combined. Taste and adjust sweetness or seasoning if needed.
  6. Transfer the sweet potato mixture to your prepared baking dish and spread evenly with a spatula.
  7. Top the casserole with mini marshmallows, arranging them evenly across the surface.
  8. Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden and the casserole is bubbling around the edges.
  9. Let the casserole cool for 5-10 minutes before serving. Enjoy warm!
