  • 1/2 teaspoon salt

  • 1 cup brown sugar, packed
  • 1/3 cup all-purpose flour

Instructions

  1. Peel and cube 4-5 medium sweet potatoes. Place them in a large pot and cover with water. Bring to a boil over medium-high heat and cook for 15-20 minutes or until fork-tender.
  2. Preheat your oven to 375°F (190°C). Grease a 9×13 inch casserole dish with butter or non-stick spray.
  3. Drain the cooked sweet potatoes and transfer them to a large mixing bowl. Add 1/2 cup of softened butter, 1/2 cup of granulated sugar, 2 large eggs, 1/3 cup of milk, 1 teaspoon of vanilla extract, and 1/2 teaspoon of salt. Mash everything together until smooth and creamy.
  4. In a separate bowl, combine 1 cup of brown sugar, 1/3 cup of all-purpose flour, 1/3 cup of melted butter, and 1 cup of chopped pecans. Mix until the ingredients are evenly coated and start to clump together.
  5. Spread the sweet potato mixture evenly into the prepared baking dish. Sprinkle the pecan topping over the sweet potatoes, ensuring it’s distributed evenly for maximum crunch.
  6. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and bubbling.
