  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (160g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (180g) white chocolate chips
  • 1 cup (120g) dried cranberries
  • 1 cup chopped pecans, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Spread the chopped pecans on a baking sheet and toast in the preheated oven for 5-7 minutes until fragrant. Let them cool.
  3. In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
  4. In a large mixing bowl, use a hand or stand mixer to beat softened unsalted butter, granulated sugar, and packed brown sugar until light and fluffy, about 2-3 minutes.
  5. Beat in eggs one at a time, followed by vanilla extract.
  6. Gradually add the dry mixture into the wet mixture, mixing just until combined.
  7. Stir in white chocolate chips, dried cranberries, and the cooled toasted pecans.
  8. Use a cookie scoop or tablespoon to portion the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may appear slightly underbaked, but they’ll set as they cool.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
