  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks or canned pineapple (drained)
  • 1/4 cup bourbon
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together the bourbon, soy sauce, brown sugar, minced garlic, grated ginger, olive oil, and red pepper flakes. Add salt and pepper to taste. Set aside 1/4 cup of the marinade for basting later.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is fully coated. Seal the bag or cover the dish, then refrigerate for at least 2 hours or up to overnight.
  3. Preheat your cooking surface: medium-high heat for a grill, or 375°F (190°C) for a skillet or oven.
  4. Remove the chicken from the marinade and discard the excess. Place the chicken on the grill or skillet and cook for 6-8 minutes per side, basting occasionally with the reserved marinade. Ensure the internal temperature reaches 165°F (74°C).
  5. During the last few minutes of cooking, add the pineapple chunks to the grill or skillet. Cook until caramelized and slightly charred.
  6. Remove the chicken and pineapple from the heat. Let the chicken rest for 5 minutes before slicing. Serve with the pineapple on the side or as a garnish.

Notes

For best results, marinate the chicken overnight. Use fresh pineapple for enhanced flavor and texture. Adjust red pepper flakes for desired spice level.
