  • 2 large eggs
  • 1 cup (240 ml) milk
  • 1/3 cup (80 g) pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 tablespoon brown sugar
  • Butter for greasing the pan
  • Optional toppings: maple syrup, whipped cream, powdered sugar, crushed pecans

Instructions

  1. In a large mixing bowl, whisk together 2 large eggs, 1 cup milk, 1/3 cup pumpkin puree, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground cloves, and 1 tablespoon brown sugar until smooth and well-combined.
  2. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter and let it melt completely.
  3. Dip each slice of bread into the pumpkin custard mixture, soaking for about 5-10 seconds on each side.
  4. Place the soaked bread onto the hot skillet and cook for about 2-3 minutes per side, or until golden brown and slightly crispy.
  5. Repeat with the remaining slices, adding more butter to the skillet as needed.
  6. Transfer cooked slices to a plate and keep warm while preparing the rest.
  7. Serve hot with your favorite toppings: maple syrup, whipped cream, powdered sugar, or crushed nuts.

Notes

Use slightly stale bread for better texture. Preheat your skillet to avoid sticking, and don’t skip the butter for a golden crust. Store leftovers in the fridge for up to 3 days or freeze for longer storage.
