  • ¾ cup (180g) pumpkin puree (not pumpkin pie filling)
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • Optional: ½ cup (60g) chopped pecans or walnuts
  • Optional: powdered sugar icing for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or grease it well.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add the eggs, vanilla extract, and pumpkin puree, mixing until fully combined.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until no streaks of flour remain. Avoid overmixing.
  5. In a small bowl, mix the granulated sugar and cinnamon for the snickerdoodle topping.
  6. Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle the cinnamon-sugar mixture evenly over the top.
  7. Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow the blondies to cool completely in the pan before slicing into squares. Serve as-is or with a drizzle of icing for extra sweetness.
