  • 2 cups semi-sweet chocolate chips or melting chocolate
  • 1 tablespoon coconut oil (optional, for smoother melting)

  • Chopped nuts (pecans or walnuts, optional)
  • Sprinkles (optional)

Instructions

  1. In a large mixing bowl, beat the pumpkin puree and softened cream cheese together until smooth.
  2. Add the powdered sugar, vanilla extract, ground cinnamon, pumpkin spice, and salt. Mix until fully combined and the filling is creamy.
  3. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the filling.
  4. Once chilled, use a small cookie scoop or spoon to portion the filling into balls. Roll each portion gently between your palms to create smooth spheres. Place them on a parchment-lined baking sheet.
  5. Freeze the truffle balls for 15-20 minutes to make dipping easier.
  6. While the truffles are freezing, melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted. Add coconut oil for a smoother texture if desired.
  7. Using a fork or dipping tool, coat each truffle in the melted chocolate, letting the excess drip off. Place them back on the parchment-lined baking sheet.
  8. Decorate immediately with crushed graham crackers, chopped nuts, or sprinkles before the chocolate hardens.
  9. Once all truffles are coated and decorated, refrigerate them for 15-20 minutes to set the chocolate completely.
