  • 4 cups (about 300g) broccoli florets, washed and trimmed
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup (60ml) low sodium soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • 2 tablespoons vegetable oil
  • Optional: red pepper flakes or sliced green onions for garnish

Instructions

  1. Thinly slice 1 pound (450g) of flank steak or sirloin against the grain into about 1/8-inch thick slices.
  2. In a bowl, combine the sliced beef with 2 tablespoons soy sauce, 1 teaspoon cornstarch, and 1 teaspoon vegetable oil. Mix well and let sit for 10 minutes.
  3. Wash and cut broccoli into bite-sized florets (about 4 cups or 300g). Optionally parboil or steam for 1-2 minutes for extra crispness, then drain.
  4. In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, minced garlic, and grated ginger. Set aside.
  5. Heat a wok or large skillet over medium-high heat and add 2 tablespoons vegetable oil. Heat until hot but not smoking.
  6. Add the marinated beef in a single layer. Let sear without stirring for 1 minute, then stir-fry for 2 more minutes until browned but not fully cooked. Remove beef and set aside.
  7. In the same pan, add more oil if needed. Stir-fry broccoli for 3-4 minutes until bright green and tender-crisp.
  8. Return beef to the pan with broccoli. Pour the sauce over and stir to coat.
  9. Add the cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the pan. Stir constantly for 1-2 minutes until sauce thickens.
  10. Drizzle 1 teaspoon sesame oil over the stir-fry, toss to combine, and remove from heat.

Notes

Slice beef thinly against the grain for tenderness. Marinate beef for at least 10 minutes to tenderize. Avoid overcrowding the pan to prevent steaming and soggy broccoli. Stir constantly when adding cornstarch slurry to avoid lumps. Use fresh ginger and garlic for best flavor. Sesame oil added at the end enhances nuttiness.
