A fast and flavorful beef and broccoli stir-fry that comes together in just 20 minutes, perfect for busy weeknights. This dish balances savory, sweet, and fresh flavors with simple ingredients and a quick marinating step for tender beef.

  • 12 oz (340 g) flank steak or sirloin, thinly sliced against the grain
  • 3 cups (about 300 g) fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 tsp freshly grated ginger
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce (optional but recommended)
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • 2 tbsp vegetable or canola oil
  • 1 tbsp cornstarch
  • 1/4 cup (60 ml) water
  • 2 stalks green onions, sliced thinly (optional)

Instructions

  1. Slice the beef thinly against the grain into strips about 1/4-inch thick. Tip: Freeze beef for 15 minutes beforehand to firm it up for easier slicing.
  2. Cut fresh broccoli into bite-sized florets, rinse and set aside.
  3. Make the marinade by mixing 2 tbsp soy sauce, 1 tsp cornstarch, and 1 tsp vegetable oil. Toss the beef strips in this mixture and let sit while preparing the sauce.
  4. Mix the sauce by whisking together 1 tbsp soy sauce, 2 tbsp oyster sauce, 1 tsp brown sugar, minced garlic, grated ginger, and 1/4 cup water. Set aside.
  5. Heat wok or large skillet over medium-high heat and add 2 tbsp vegetable oil. When oil shimmers, add marinated beef in a single layer. Stir-fry quickly until beef starts to brown but is not fully cooked, about 2-3 minutes. Remove beef and set aside.
  6. In the same pan, add more oil if needed. Toss in broccoli florets and stir-fry for 1-2 minutes until bright green. Pour in sauce mixture and cover pan to steam broccoli for about 2 minutes until tender-crisp.
  7. Return beef to pan and toss everything together. Cook for another minute until sauce thickens and coats beef and broccoli. Drizzle sesame oil over the top and toss. Remove from heat.
  8. Garnish with sliced green onions if desired and serve immediately over steamed rice or noodles.

Notes

Freeze beef for 15 minutes before slicing to make it easier to cut thinly. Use high smoke point oil like vegetable or canola oil for stir-frying. Avoid overcrowding the pan to get a good sear on the beef. Flash-steam broccoli with sauce to keep it bright and crisp. If sauce thickens too much, add a splash of water to loosen it.
