A sparkling brown sugar peach iced tea that is refreshingly light, satisfyingly sweet, and perfect for summer. This easy homemade drink balances natural peach sweetness with caramel notes and a playful fizz.

Ingredients

Scale
  • 4 black tea bags (Assam or English Breakfast preferred)
  • 2 medium ripe peaches, peeled and sliced
  • 1/3 cup brown sugar (dark preferred)
  • 4 cups water (1 liter)
  • 2 tablespoons fresh lemon juice
  • 2 cups sparkling water (475 ml), plain or lightly flavored
  • Ice cubes
  • Optional: fresh mint leaves for garnish

Instructions

  1. Bring 4 cups (1 liter) of water to a rolling boil in a kettle or saucepan (about 5 minutes).
  2. Place 4 black tea bags in a teapot or heatproof pitcher, pour hot water over, and steep for 5–7 minutes for a strong brew.
  3. While tea steeps, peel and slice 2 ripe peaches. In a saucepan, combine peach slices with 1/3 cup brown sugar and 1 cup (240 ml) water. Warm over medium heat, stirring gently until sugar dissolves and peaches soften slightly (about 7 minutes).
  4. Remove tea bags from steeped tea. Strain warm peach mixture through a fine mesh sieve into the tea, pressing peaches to extract juice. Discard solids.
  5. Stir in 2 tablespoons fresh lemon juice to brighten flavors and balance sweetness.
  6. Let mixture cool to room temperature, then refrigerate for at least 1 hour to chill thoroughly.
  7. To serve, fill glasses with ice cubes, pour chilled tea halfway, and top with sparkling water (about 1/2 cup or 120 ml per glass). Stir gently to combine.
  8. Garnish with a thin peach slice or sprig of mint if desired. Enjoy!

Notes

Do not oversteep tea to avoid bitterness. Use ripe peaches for best flavor; frozen peaches can be used if thawed gently. Warm peaches with sugar to release juices and deepen flavor. Chill tea fully before adding sparkling water to preserve fizz. Adjust sweetness after chilling by adding sugar or lemon juice as needed. Peach syrup can be made a day ahead and stored refrigerated.
