A quick and cooling frozen strawberry lemon slushie with fresh mint, perfect for beating the summer heat with a refreshing, tangy, and lightly sweetened icy drink.

Ingredients

Scale
  • 2 cups (300 g) frozen strawberries, unsweetened
  • 1/4 cup (60 ml) fresh lemon juice (about 12 lemons), freshly squeezed
  • 1012 fresh mint leaves, washed and gently torn
  • 1 to 1 1/2 cups (240360 ml) ice cubes
  • 12 tablespoons (1530 ml) honey or agave syrup (optional)
  • 1/4 cup (60 ml) cold water

Instructions

  1. Prepare the Ingredients (5 minutes): Measure 2 cups (300 g) of frozen strawberries. Rinse and tear 10-12 fresh mint leaves. Juice lemons to yield 1/4 cup (60 ml) fresh lemon juice, straining out seeds.
  2. Add Ingredients to Blender (2 minutes): Place frozen strawberries, lemon juice, mint leaves, and 1 cup (240 ml) ice cubes into the blender. Add 1 tablespoon (15 ml) honey or agave syrup if desired. Pour in 1/4 cup (60 ml) cold water.
  3. Blend Until Smooth (1-2 minutes): Pulse blender initially, then blend continuously until thick and icy with no large chunks. Adjust consistency by adding more water or ice as needed.
  4. Taste and Adjust (1 minute): Taste the slushie and add more honey/agave for sweetness or extra mint leaves for more minty flavor if desired.
  5. Serve Immediately (1 minute): Pour into chilled tall glasses, garnish with a sprig of fresh mint or a thin lemon wheel, insert straws, and enjoy immediately.

Notes

Tear or gently muddle mint leaves before blending to release oils without bitterness. Use fresh lemon juice for best brightness. Pulse blender first to break ice, then blend steadily. Adjust sweetness with honey or agave syrup as needed. Serve immediately for best icy texture. Leftovers can be frozen up to 2 days and re-blended before serving.
