A quick and easy summer slushie blending frozen watermelon, fresh mint, lemon juice, and crushed ice for a refreshing, icy treat perfect for hot days.

  • 4 cups cubed and frozen seedless watermelon
  • 1012 fresh mint leaves, washed and gently bruised
  • ½ cup fresh lemon juice (about 23 lemons), strained
  • 3 tablespoons simple syrup or honey (adjust to taste)
  • 2 cups crushed ice
  • ½ cup cold water or sparkling water (to adjust consistency)
  • Pinch of sea salt (optional)

Instructions

  1. Cut seedless watermelon into cubes and freeze overnight or for at least 6 hours.
  2. Using a citrus juicer, squeeze lemons to get about ½ cup (120 ml) of fresh lemon juice. Strain to remove seeds and pulp.
  3. Make simple syrup if needed by dissolving equal parts sugar and water (e.g., ¼ cup each) in a saucepan, then cool completely. Alternatively, use honey or agave nectar directly.
  4. Place 10-12 fresh mint leaves in the blender or a small bowl and gently bruise with a muddler or spoon to release oils without shredding.
  5. Add frozen watermelon cubes, bruised mint leaves, fresh lemon juice, simple syrup or honey, and crushed ice into the blender. Blend on high for 30-45 seconds until smooth and slushy.
  6. If the mixture is too thick, add cold water or sparkling water up to ½ cup to loosen.
  7. Taste and adjust sweetness or tartness as needed. Add a pinch of sea salt if desired to enhance flavors.
  8. Pour into chilled glasses or mason jars immediately. Garnish with a sprig of mint or a small watermelon wedge and serve.

Notes

Freeze watermelon cubes overnight for best icy texture. Gently bruise mint leaves to avoid bitterness. Use crushed ice instead of whole cubes for smoother blending. Add sparkling water for fizz. Pre-chill glasses for extra refreshment. Re-blend if stored and thawed before serving.
