A light, floral, and fizzy cocktail combining lavender syrup, fresh lemon juice, gin, and soda water for a perfect summer refreshment.

Ingredients

Scale
  • 2 oz (60 ml) gin (preferably London Dry like Bombay Sapphire)
  • 1 oz (30 ml) fresh lemon juice
  • 0.75 oz (22 ml) lavender syrup (homemade or store-bought)
  • 23 oz (6090 ml) soda water
  • Ice cubes
  • Lemon wheel or lavender sprig (optional, for garnish)

Instructions

  1. Make the lavender syrup if not using store-bought: Combine 1 cup (240 ml) water, 1 cup (200 g) sugar, and 2 tbsp dried culinary lavender in a saucepan. Heat gently, stirring until sugar dissolves. Simmer for 5 minutes, then remove from heat and let steep for 20 minutes. Strain and cool completely.
  2. Juice the lemons to get 1 oz (30 ml) fresh lemon juice per cocktail, straining out seeds.
  3. In a cocktail shaker, combine 2 oz (60 ml) gin, 1 oz (30 ml) fresh lemon juice, and 0.75 oz (22 ml) lavender syrup. Fill halfway with ice.
  4. Shake vigorously for about 15 seconds until chilled and frothy.
  5. Strain into a tall glass filled with fresh ice cubes.
  6. Top with 2-3 oz (60-90 ml) soda water and gently stir once to combine without losing fizz.
  7. Garnish with a lemon wheel or a sprig of fresh lavender and serve immediately.

Notes

Use fresh lemon juice for best flavor. Homemade lavender syrup controls sweetness and floral intensity. Chill glassware beforehand to keep cocktail cooler longer. Shake vigorously before adding soda water, but stir gently after to preserve fizz. Store leftover lavender syrup in fridge up to two weeks. For low-alcohol version, use non-alcoholic botanical spirit or reduce gin and increase soda water.
