Refreshing Peach Ginger Sparkling Mocktail with Mint

A light and bubbly summer mocktail combining fresh peaches, ginger, mint, and sparkling water for a refreshing and easy-to-make drink.

Ingredients

  • 2 medium fresh peaches, ripe and juicy, sliced
  • 1-inch piece fresh ginger root, peeled and thinly sliced
  • 10 fresh mint leaves
  • 3 cups (720 ml) sparkling water or club soda
  • 12 tablespoons honey or agave syrup (optional)
  • Juice of ½ lemon (about 1 tablespoon / 15 ml)
  • Ice cubes

Instructions

  1. Wash and slice 2 medium ripe peaches into thin wedges.
  2. Peel and slice a 1-inch piece of fresh ginger into thin rounds.
  3. Place 10 fresh mint leaves and ginger slices into a mixing pitcher.
  4. Gently muddle the mint and ginger with a muddler or the back of a wooden spoon for 1-2 minutes to release oils and aromas without bitterness.
  5. Add the peach slices and juice of half a lemon to the pitcher.
  6. Stir in 1-2 tablespoons of honey or agave syrup if desired, mixing well.
  7. Fill the pitcher about halfway with ice cubes, then pour in 3 cups (720 ml) of chilled sparkling water or club soda.
  8. Gently stir to combine without losing too much fizz.
  9. Let the mocktail rest for 5-10 minutes to allow flavors to meld.
  10. Pour into tall glasses filled with additional ice if desired.
  11. Garnish each glass with a sprig of fresh mint and a thin peach slice.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe peaches for best flavor. Add sweetener based on peach ripeness and personal preference. Let the drink rest for 5-10 minutes before serving to meld flavors but serve within 30 minutes to keep fizz. Remove ginger slices if ginger flavor is too strong.
