  • 34 medium jalapeno peppers, seeded and finely diced
  • 12 slices thin-cut bacon
  • 4 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • ½ cup shredded sharp cheddar cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh chives, finely chopped (optional)

Instructions

  1. Place 12 large eggs in a single layer in a pot and cover with cold water by about an inch. Bring to a boil over medium-high heat, then cover the pot, turn off heat, and let sit for 12 minutes.
  2. Transfer eggs to an ice bath to cool completely, about 10 minutes.
  3. Gently crack shells and peel eggs under running water. Slice each egg in half lengthwise and carefully remove yolks, placing them in a medium mixing bowl.
  4. Mash the yolks with softened cream cheese until smooth. Add mayonnaise, shredded sharp cheddar, finely diced jalapenos, garlic powder, salt, and pepper. Mix thoroughly until creamy and well combined.
  5. Using a spoon or piping bag, fill each egg white half evenly with the yolk mixture, mounding slightly.
  6. Cut bacon strips in half if needed. Wrap one strip around each filled egg half, securing with a toothpick if necessary.
  7. Preheat oven to 400°F (200°C). Place bacon-wrapped eggs on a parchment-lined baking sheet or cooling rack set over a sheet for extra crispiness.
  8. Bake for 15-20 minutes or until bacon is crispy and golden, watching carefully to avoid overcooking.
  9. Remove from oven and let cool slightly. Sprinkle each egg with smoked paprika.
  10. Garnish with fresh chopped chives before serving.

Notes

For easier peeling, use fresh eggs and an ice bath after boiling. To prevent bacon from curling, partially cook strips for 3-4 minutes before wrapping. Adjust jalapeno seeds to control heat. Thin-cut bacon crisps better and wraps easier. Prepare filling and boil eggs a day ahead for convenience.
