  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your grill to medium-high (375-400°F) or oven to 400°F (205°C).
  2. Slice the bell peppers and onions into thin strips about 1/4 inch thick.
  3. In a medium bowl, toss the peppers and onions with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Tear off four large sheets of heavy-duty aluminum foil, about 12 inches square each.
  5. Divide the seasoned veggies evenly among the foil sheets, placing them in the center.
  6. Lay one bratwurst on top of each veggie pile.
  7. Pour about 1/4 cup (60 ml) of beer over each brat and veggie mixture.
  8. Fold the foil over the ingredients and crimp the edges tightly to create sealed packets.
  9. Place the foil packets on the grill or a baking sheet.
  10. Cook for 20-25 minutes, flipping once halfway through, until brats reach an internal temperature of 160°F (71°C) and veggies are tender and slightly caramelized.
  11. Carefully open the packets and let rest for 3-5 minutes to redistribute juices.
  12. Garnish with fresh parsley if desired and serve directly from the foil.
