Savory Honey Garlic Butter Chicken Bites with Roasted Parmesan Broccoli

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 3 large garlic cloves, minced
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 4 cups broccoli florets (about 300g)
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup grated Parmesan cheese (about 25g)
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cut about 1 pound of boneless chicken thighs or breasts into 1-inch pieces. Pat dry with paper towels and season lightly with salt and pepper.
  2. Preheat oven to 425°F (220°C). Toss 4 cups of broccoli florets with 2 tablespoons olive oil, 1/4 cup grated Parmesan, 1/2 teaspoon garlic powder, salt, pepper, and optional red pepper flakes. Spread evenly on a parchment-lined baking sheet.
  3. Roast broccoli for 15-20 minutes, turning once halfway through, until tender with crispy edges and golden Parmesan spots.
  4. While broccoli roasts, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken bites in a single layer and cook undisturbed for about 3 minutes until golden crust forms. Flip and cook another 2-3 minutes until cooked through. Remove chicken and set aside.
  5. Lower heat to medium and add 3 tablespoons unsalted butter to the skillet. Once melted, stir in minced garlic and sauté for about 30 seconds until fragrant.
  6. Add 2 tablespoons honey, stir well, and let sauce bubble gently for 1-2 minutes to thicken slightly.
  7. Return cooked chicken bites to skillet and toss to coat with honey garlic butter sauce. Cook together for another minute to let sauce cling.
  8. Remove from heat, taste and adjust seasoning if needed. Serve chicken bites hot alongside roasted Parmesan broccoli.

Notes

Use unsalted butter to control saltiness. Avoid burning garlic by adding it after butter melts and sautéing briefly. Keep chicken pieces uniform in size for even cooking. Do not overcrowd pan when searing chicken to ensure browning. Fresh broccoli is recommended over frozen for best texture. Warm thick or crystallized honey slightly before use. For dairy-free, substitute butter with ghee or coconut oil and Parmesan with nutritional yeast or omit.
