  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste, kosher salt preferred
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the pork tenderloin by removing any silver skin or excess fat.
  3. In a small bowl, whisk together honey, minced garlic, olive oil, chopped rosemary, thyme, lemon juice, salt, and pepper until smooth and glossy.
  4. Heat your skillet over medium-high heat and add a teaspoon of olive oil.
  5. Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.
  6. Brush the pork generously with the honey garlic herb glaze while still in the skillet.
  7. Transfer the skillet to the preheated oven and roast for 15-20 minutes, brushing once more halfway through. Use a meat thermometer to check for an internal temperature of 145°F (63°C).
  8. Remove from oven and place the pork on a cutting board. Tent with foil and let rest for 5-10 minutes.
  9. While resting, add butter to the skillet over low heat, stirring to combine with the drippings and remaining glaze for a silky herb sauce.
  10. Slice the pork into 1/2 inch thick medallions and drizzle with the warm herb glaze sauce.

Never skip the sear to develop a caramelized crust. Rest the pork for 5-10 minutes before slicing to keep it juicy. Brush the glaze multiple times during cooking for a glossy finish.
