A simple and comforting slow cooker chicken recipe with a sticky honey garlic glaze that is easy to prepare and perfect for cozy dinners.

  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup (85g) honey
  • 1/3 cup (80ml) soy sauce (low-sodium recommended)
  • 4 large garlic cloves, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15g) tomato paste
  • 1/4 cup (60ml) water
  • 1 tablespoon (8g) cornstarch mixed with 2 tablespoons (30ml) cold water
  • 1 teaspoon (5ml) sesame oil
  • Green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Trim any excess fat from the chicken thighs and pat them dry with paper towels.
  2. In a mixing bowl, combine honey, soy sauce, minced garlic, rice vinegar, tomato paste, water, and sesame oil. Whisk until smooth.
  3. Place the chicken thighs in a single layer in the slow cooker and pour the sauce evenly over the chicken.
  4. Cover and cook on low for 4 to 5 hours, or until the chicken reaches an internal temperature of 165°F and is tender.
  5. About 15 minutes before serving, mix cornstarch with cold water to make a slurry. Stir it gently into the slow cooker.
  6. Turn the slow cooker to high and cook for 10-15 minutes until the sauce thickens and becomes glossy.
  7. Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds before serving.

Notes

Pat chicken dry to help glaze stick. Add cornstarch slurry late to avoid gummy sauce. Optional searing adds flavor but is not necessary. Avoid lifting slow cooker lid during cooking. For gluten-free, use tamari instead of soy sauce. Can add vegetables in last hour or spice with red pepper flakes or Sriracha.
