Instructions

  1. Pat the chicken thighs dry with paper towels and season lightly with salt and pepper on both sides.
  2. In a medium mixing bowl, whisk together soy sauce, honey, minced garlic, and rice vinegar until smooth and glossy.
  3. Place the chicken thighs skin-side up in a single layer inside a 4 to 6-quart slow cooker.
  4. Pour the sauce evenly over the chicken, coating each thigh.
  5. Cover and cook on low for 4 to 5 hours until the chicken is tender and the sauce has thickened to a sticky glaze.
  6. Optional: For crispier skin, transfer chicken to a baking sheet, spoon some sauce over, and broil for 2-3 minutes until skin crisps.
