  • 1 cup chicken broth (or vegetable broth for vegetarian option)
  • 2 tbsp unsalted butter
  • 1/2 cup celery, finely diced
  • 1/2 cup onion, finely chopped (yellow onion recommended)
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • Olive oil (for greasing muffin tin)
  • Cranberry sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard muffin tin with olive oil or cooking spray and set aside.
  2. In a skillet over medium heat, melt the butter. Add the diced onion and celery, cooking until softened and fragrant, about 5-7 minutes.
  3. Transfer the cooked onion and celery to a large mixing bowl. Add the ground sausage and cook in the same skillet until browned and cooked through, about 8-10 minutes. Drain any excess grease and add the sausage to the bowl.
  4. Prepare the stuffing mix according to package instructions, using chicken broth instead of water for extra flavor. Once ready, add the stuffing to the bowl with the sausage and vegetables.
  5. Crack the egg into the bowl and add the chopped parsley. Mix everything together gently until well combined. Be careful not to overmix, as this can make the stuffing dense.
  6. Spoon the mixture into the greased muffin tin, pressing down slightly to pack the bites. Fill each cavity to the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.
  8. Remove from the oven and let the bites cool in the pan for about 5 minutes. Then, carefully run a butter knife around the edges to release them.
