These savory stuffing balls are a modern twist on classic stuffing, offering bite-sized portions that are crispy on the outside and tender on the inside—perfect for your Thanksgiving table.

Ingredients

Scale
  • 6 cups day-old bread cubes (sourdough, white, or whole wheat)
  • 1/2 cup unsalted butter, melted
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely chopped
  • 1 cup chicken or vegetable broth
  • 2 large eggs, beaten
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Spread the cubed bread on a baking sheet and toast in the oven for 10 minutes, or until slightly crispy. Let it cool.
  3. Heat 2 tablespoons of butter in a small skillet over medium heat. Add diced onion and chopped celery, cooking until softened and fragrant—about 5 minutes.
  4. In a large mixing bowl, combine the toasted bread cubes, sautéed veggies, parsley, dried sage, thyme, salt, and pepper. Toss to evenly distribute the flavors.
  5. Pour melted butter and chicken broth over the bread mixture. Stir gently to moisten all the bread cubes without making them soggy.
  6. Add the beaten eggs and mix until the stuffing holds together when pressed gently.
  7. Using your hands, scoop out a handful of the stuffing mixture and shape it into golf ball-sized portions. Place them on the prepared baking sheet, leaving a little space between each one.
  8. Bake the stuffing balls in the preheated oven for 20-25 minutes or until they’re golden brown and slightly crispy on the outside.
  9. Remove the baking sheet from the oven and let the stuffing balls cool for 5 minutes before serving.
