A quick and easy recipe for soft, chewy peanut butter cookies made with just three pantry staples: peanut butter, sugar, and an egg. Perfect for a comforting treat with minimal effort.

  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • Optional: pinch of salt if peanut butter is unsalted
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, combine 1 cup (240g) creamy peanut butter with 3/4 cup (150g) granulated sugar. Stir until well blended.
  3. Crack in 1 large room-temperature egg and mix until the dough comes together. It will be thick and sticky; do not overmix.
  4. Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart. You will get around 18 cookies.
  5. Lightly press each dough ball with the back of a fork to create a criss-cross pattern.
  6. Bake for 10–12 minutes until cookies look set but still soft in the center. Avoid overbaking to keep them soft.
  7. Remove from oven and let cookies cool on the baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.

Do not overbake to maintain softness. Use room-temperature eggs for better mixing. Stir peanut butter before measuring if natural to ensure even moisture. Chilling dough for 10-15 minutes can help prevent spreading if peanut butter is oily or kitchen is warm. Fork pressing helps cookies bake evenly and creates a classic look.
