  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 cups beef broth, preferably low sodium
  • 2 tablespoons tomato paste
  • 1 cup red wine (dry variety like Cabernet Sauvignon), optional
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 medium potatoes, peeled and cubed (optional)
  • A handful fresh parsley, chopped (for garnish)

Instructions

  1. Pat beef chuck roast chunks dry with paper towels to help with browning.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef pieces in batches for 3-4 minutes per side until deeply caramelized. Transfer browned beef to the slow cooker.
  3. In the same skillet, reduce heat to medium. Add diced onion, minced garlic, sliced carrots, and chopped celery. Cook for 5-7 minutes until softened and fragrant, stirring occasionally.
  4. Pour in red wine (or beef broth if skipping wine) to deglaze the pan, scraping browned bits off the bottom with a wooden spoon.
  5. Transfer sautéed veggies and wine mixture to the slow cooker. Add beef broth, tomato paste, Worcestershire sauce, thyme, bay leaves, and season with salt and pepper.
  6. If using, add peeled and cubed potatoes to the slow cooker.
  7. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is fork-tender and flavors melded.
  8. Remove bay leaves, taste, and adjust seasoning if needed. Stir in chopped fresh parsley.
  9. Ladle beef and veggies into warm bowls and serve immediately. Optionally serve with crusty bread or creamy mashed potatoes.
  10. If sauce is too thin, whisk 1 tablespoon cornstarch with 2 tablespoons cold water and stir into slow cooker. Cook for 10 more minutes to thicken.

Notes

Brown the beef well to develop deep flavor. Avoid lifting the slow cooker lid during cooking to maintain heat. If beef is not tender after recommended time, cook longer. For gluten-free, use gluten-free Worcestershire sauce or tamari. For thicker sauce, use cornstarch slurry. Can substitute red wine with extra beef broth.
