  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

  • Optional: Baby potatoes or carrots
  • Optional: Parmesan cheese, for serving

Instructions

  1. Pat chicken dry with paper towels. If using large breasts, slice in half horizontally for even cooking.
  2. In a medium bowl, whisk together melted butter, minced garlic, lemon juice, chicken broth, Italian seasoning, salt, black pepper, and paprika (if using).
  3. Lay chicken in a single layer in the bottom of a 4- to 6-quart slow cooker.
  4. Pour the garlic butter sauce evenly over the chicken, ensuring all pieces are coated.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–2.5 hours, until chicken is cooked through (165°F at thickest part) and tender.
  6. If adding baby potatoes or carrots, tuck them around the chicken before pouring the sauce.
  7. Let chicken rest in the slow cooker with the lid off for 5–10 minutes after cooking.
  8. Garnish with chopped parsley and a sprinkle of parmesan cheese, if desired.
  9. Serve chicken and sauce over rice, mashed potatoes, or steamed veggies.

For best results, use fresh garlic and high-quality butter. Don’t overcook—check for doneness at the 4-hour mark on low. If sauce is too thin, remove chicken and simmer sauce on high with lid off for 10–15 minutes or whisk in a cornstarch slurry. For a dairy-free version, substitute vegan butter or olive oil. Add veggies like potatoes or carrots for a one-pot meal. Leftovers store well and taste even better the next day.
