These soft and chewy oatmeal chocolate chip cookies are the perfect blend of nostalgia and indulgence, with golden edges, soft centers, and bursts of melty chocolate.

  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (180g) old-fashioned rolled oats
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • Optional: 1/2 cup (50g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand or stand mixer. Mix until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract. Mix until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Fold in the rolled oats and chocolate chips. If desired, add chopped nuts.
  7. Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may seem slightly underbaked, but they’ll set as they cool.
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
