  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together 1/2 cup unsalted butter and 1/2 cup creamy peanut butter using a hand mixer or stand mixer until smooth and fluffy.
  3. Add 1/2 cup packed brown sugar and 1/4 cup granulated sugar. Beat until well combined and creamy.
  4. Mix in 1 large egg and 1 teaspoon vanilla extract. Continue mixing until fully incorporated.
  5. In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a dough forms. Be careful not to overmix—stop as soon as the flour disappears.
  7. Fold in 3/4 cup semi-sweet chocolate chips using a spatula.
  8. Use a cookie scoop or tablespoon to portion the dough onto your prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 9-11 minutes, or until the edges are set and the centers look slightly underbaked. They’ll firm up as they cool.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
