Ingredients

Scale
  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (150g) dried cherries
  • 1 cup (175g) chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat 1 cup (225g) of softened unsalted butter with 3/4 cup (150g) of granulated sugar and 3/4 cup (150g) of brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in 1 large egg and 2 teaspoons of vanilla extract until fully combined.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) of all-purpose flour, 2 teaspoons of cornstarch, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing to keep the cookies tender.
  6. Fold in 1 cup (150g) of dried cherries and 1 cup (175g) of chocolate chips, ensuring they are evenly distributed.
  7. If the dough feels sticky, cover the bowl with plastic wrap and chill for 20-30 minutes.
  8. Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, until the edges are lightly golden. The centers may look slightly underdone.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

[‘Chill the dough if it feels sticky to make scooping easier and help the cookies maintain their shape while baking.’, ‘Use high-quality chocolate chips or chop up a dark chocolate bar for a gourmet touch.’, ‘Don’t overbake the cookies; they should look slightly underdone in the center when removed from the oven.’, ‘Opt for dried cherries that are plump and not too dry. If they’re hard, soak them in warm water for 10 minutes, then pat dry before adding to the dough.’, ‘Experiment with mix-ins like chopped nuts, shredded coconut, or a sprinkle of sea salt for added flavor and texture.’]
