  • 3 tablespoons (42 g) unsalted butter, softened

Instructions

  1. Warm 1 cup (240 ml) of milk to about 110°F (43°C). In a mixing bowl, combine warm milk with 2 ¼ teaspoons instant yeast and 1 tablespoon granulated sugar. Let sit for 5 minutes until foamy.
  2. Add 3 ½ cups (440 g) all-purpose flour, ¼ cup (50 g) granulated sugar, and 1 teaspoon salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Add 4 tablespoons (56 g) melted butter and 1 room temperature egg. Knead dough with a stand mixer dough hook for 6-8 minutes or by hand for about 10 minutes until smooth and elastic.
  4. Place dough in a lightly greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Mix ½ cup (100 g) brown sugar with 2 tablespoons ground cinnamon in a small bowl. Set aside. Soften 3 tablespoons (42 g) butter.
  6. Punch down the risen dough and roll out on a floured surface into a 12×16 inch (30×40 cm) rectangle.
  7. Spread softened butter evenly over the dough, then sprinkle cinnamon sugar mixture over the surface, leaving a small border.
  8. Roll the dough tightly from one long edge into a log. Pinch seam to seal and trim ends if uneven. Place seam-side down in a greased 9×5 inch loaf pan.
  9. Cover pan loosely and let dough rise again for 30-40 minutes until puffed just above the pan rim.
  10. Brush top with milk or melted butter and sprinkle coarse sugar if desired.
  11. Preheat oven to 350°F (175°C). Bake bread for 35-40 minutes until crust is deep golden brown and sounds hollow when tapped. Tent with foil if browning too quickly.
  12. Remove bread from pan and cool on a wire rack for at least 20 minutes before slicing.
