  • 1/2 cup (4 fl oz) water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce (optional)
  • 1 small shallot, finely chopped (or 1/4 cup onion)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil or butter (for sautéing)
  • Salt to taste

Instructions

  1. Make the Au Jus: Heat 1 tablespoon olive oil or butter in a medium saucepan over medium heat. Add the chopped shallot and garlic, sauté for 2–3 minutes until fragrant and translucent but not browned.
  2. Add 2 cups beef broth, 1/2 cup water, Worcestershire sauce, soy sauce, thyme, and black pepper. Stir to combine. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 15–20 minutes. Taste and add salt if needed. Keep warm on low heat.
  3. Prepare the Rolls: Slice the hoagie rolls lengthwise without cutting all the way through. Spread a thin layer of butter on the cut sides.
  4. Heat a large skillet or griddle over medium heat. Place the rolls butter-side down and toast until golden and crisp, about 2 minutes. Remove and set aside.
  5. Warm the Roast Beef: Add a splash of the hot au jus to the skillet, then add the roast beef slices. Heat just until warmed through, about 1–2 minutes.
  6. Assemble the Sandwiches: Place a generous amount of warm roast beef on the bottom half of each roll. Add a slice of cheese if using. Close the sandwich and press lightly.
  7. Return the sandwich to the skillet or griddle, pressing gently with a spatula. Heat for 1–2 minutes on each side until the cheese melts and the bread crisps slightly.
  8. Serve Immediately: Transfer sandwiches to plates and pour au jus into small bowls for dipping.
