  • 1 teaspoon garlic powder
  • Assorted cheeses: sharp cheddar, pepper jack, Swiss
  • Fresh lettuce leaves (butter or iceberg)
  • Ripe tomatoes, sliced
  • Pickles: dill chips and bread & butter slices
  • Red onion rings
  • Crispy bacon strips
  • Avocado slices or guacamole
  • Jalapeño slices (fresh or pickled)
  • Grilled peaches or nectarines (optional)
  • Classic ketchup
  • Yellow mustard
  • Mayonnaise (plain or flavored, like chipotle mayo)
  • BBQ sauce
  • Spicy aioli (mayo mixed with sriracha and lime)
  • Soft brioche buns or classic sesame seed hamburger buns (toasted)

Instructions

  1. In a large bowl, combine ground beef, ground sirloin, minced onion, Worcestershire sauce, salt, pepper, and garlic powder. Mix gently by hand without overworking.
  2. Divide the mixture into 6 equal portions (about 4 ounces each).
  3. Shape each portion into a round patty about 3/4 inch thick, making a shallow indentation in the center with your thumb.
  4. Slice tomatoes, onions, and pickles. Crisp bacon strips on a pan or grill. Toast buns lightly on the grill for about 1 minute per side.
  5. Preheat grill to medium-high heat (about 400°F). Clean and oil grates.
  6. Grill patties for 4-5 minutes per side for medium doneness (internal temperature around 160°F). Add cheese slices during the last minute to melt.
  7. Let burgers rest for a couple of minutes off the grill.
  8. Set up the toppings bar and invite everyone to build their own burgers with toasted buns.

Notes

Do not overmix the meat to keep patties tender. Make a thumb indentation in patties to prevent puffing. Manage flare-ups by moving patties to cooler spots. Use a meat thermometer to check doneness.
