  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber slices
  • 1/2 cup Kalamata olives
  • 1/2 cup marinated artichoke hearts, quartered
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup assorted cheeses (feta, mozzarella balls, or favorites)
  • Handful of mixed nuts (almonds or walnuts)
  • Fresh basil and mint leaves for garnish
  • Optional: honey mustard or balsamic glaze for drizzling

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, minced garlic, chopped parsley, smoked paprika, salt, and black pepper. Mix gently until just combined.
  2. Shape the mixture into bite-sized meatballs about 1 inch in diameter, yielding approximately 20-24 meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches, searing each side for 3-4 minutes until browned and cooked through (internal temperature 165°F). Alternatively, bake meatballs on a parchment-lined baking sheet at 400°F for 15-18 minutes, turning halfway.
  4. While meatballs cook, prepare veggies and cheeses: halve cherry tomatoes, slice cucumber, quarter artichoke hearts, slice roasted red peppers, and arrange Kalamata olives and assorted cheeses on a serving platter.
  5. Arrange cooked meatballs alongside veggies, olives, cheeses, and mixed nuts on a large shallow bowl or platter. Garnish with fresh basil and mint leaves.
  6. Optionally, drizzle honey mustard or balsamic glaze over the bowl before serving. Serve immediately or refrigerate covered for up to 2 hours to let flavors meld.

Notes

Avoid overmixing the meatball mixture to keep them tender. Brown meatballs in a skillet before finishing in the oven for best texture. Cook meatballs in batches to avoid steaming.
