A fresh and crunchy salad featuring shaved Brussels sprouts, toasted pecans, and Parmesan cheese, tossed in a tangy lemon dressing. Perfect for a healthy dinner or a flavorful side dish.

Ingredients

Scale
  • 1 pound (450 grams) Brussels sprouts, trimmed and shaved
  • 1/2 cup (60 grams) pecans, toasted
  • 1/3 cup (30 grams) Parmesan cheese, freshly grated
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 small clove garlic, minced (optional)

Instructions

  1. Trim the stem ends and remove any yellow or damaged outer leaves from the Brussels sprouts. Using a mandoline or sharp knife, carefully shave the Brussels sprouts into thin ribbons about 1/8 inch (3 mm) thick.
  2. Heat a dry skillet over medium heat. Add pecans and toast, stirring frequently, until fragrant and lightly browned, about 3–5 minutes. Remove from heat and let cool.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey or maple syrup (if using), minced garlic (optional), and a pinch of salt and pepper. Adjust seasoning to taste.
  4. In a large mixing bowl, toss the shaved Brussels sprouts with the toasted pecans and grated Parmesan cheese.
  5. Pour the dressing over the salad and toss gently but thoroughly to coat every piece evenly.
  6. Allow the salad to rest for about 10 minutes before serving to soften the sprouts slightly and marry the flavors.

Notes

Shaving Brussels sprouts thinly is key for a tender yet crunchy texture. Toast pecans carefully over medium heat to avoid burning. Toss salad with dressing just before serving to keep it crisp. Letting the salad rest for 10 minutes softens the sprouts and blends flavors. For vegan version, omit Parmesan and use maple syrup instead of honey.
