Whipped Feta Mashed Potatoes with Chives

Creamy, tangy whipped feta blended into fluffy mashed potatoes with fresh chives creates a comforting yet surprising side dish perfect for any occasion.

  • 2 pounds russet potatoes (about 900 grams)
  • 6 ounces crumbled feta cheese (about 170 grams)
  • 4 tablespoons unsalted butter, softened (about 60 grams)
  • 1/4 cup whole milk or heavy cream (60 ml)
  • 2 tablespoons fresh chives, finely chopped
  • 1 clove garlic, minced (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Peel the russet potatoes and cut into roughly 1 1/2-inch chunks.
  2. Place potatoes in a large pot and cover with cold water by about an inch. Add a pinch of salt.
  3. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  4. Drain potatoes in a colander and let sit for a minute to steam dry.
  5. While potatoes cook, place crumbled feta, softened butter, and cream or milk in a mixing bowl. Whip with an electric hand mixer or stand mixer until smooth and fluffy, about 2-3 minutes.
  6. Return potatoes to pot or large bowl and mash with a potato masher or ricer until mostly smooth but still a little rustic.
  7. Fold whipped feta mixture into mashed potatoes gently but thoroughly. Add minced garlic if using.
  8. Season with salt and freshly ground black pepper to taste.
  9. Stir in finely chopped chives, reserving a small pinch for garnish.
  10. Transfer to serving bowl, sprinkle remaining chives on top, and optionally add a small pat of butter for extra richness.
  11. Serve warm.

Notes

Start boiling potatoes in cold water to cook evenly. Avoid over-mashing to prevent gluey texture. Whip feta with butter and cream before folding into potatoes for best creamy texture. Fresh chives are preferred for brightness. Add garlic finely minced or sautéed for milder flavor. If potatoes feel dry, add more cream or milk a tablespoon at a time.
