Zesty Buffalo Party Bowl Recipe with Lemon-Herb Chicken

A vibrant and flavorful bowl combining spicy buffalo sauce with fresh lemon-herb marinated chicken, served over a base of grains and crisp veggies. Perfect for quick meals, entertaining, or meal prep.

  • 2 large boneless, skinless chicken breasts (about 1 lb / 450 g)
  • 2 tablespoons olive oil (for marinade)
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped (or 1 tsp dried)
  • Salt and freshly ground black pepper, to taste
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon honey
  • 1 teaspoon smoked paprika (optional)
  • 4 cups cooked brown rice or quinoa
  • 2 cups shredded romaine lettuce or mixed greens
  • 1 cup celery sticks, sliced thin
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded sharp cheddar or blue cheese crumbles (optional)
  • ½ cup diced cucumber
  • Ranch or blue cheese dressing, for drizzling (optional)

Instructions

  1. In a large bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, parsley, salt, and pepper. Add chicken breasts and coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  2. Heat a skillet or grill pan over medium-high heat. Cook chicken breasts for about 6-7 minutes per side until internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing thinly.
  3. While chicken cooks, whisk together hot sauce, melted butter, honey, and smoked paprika in a small bowl. Adjust heat or sweetness to taste.
  4. Toss sliced chicken in buffalo sauce until well coated but not drenched.
  5. Assemble the bowl starting with cooked brown rice or quinoa, then layer shredded lettuce, celery sticks, cherry tomatoes, cucumber, and cheese if using. Top with buffalo-coated chicken.
  6. Drizzle with ranch or blue cheese dressing if desired, or add a squeeze of fresh lemon. Serve immediately.

Notes

Marinate chicken for at least 30 minutes for best flavor. Rest chicken after cooking to keep it juicy. Adjust buffalo sauce heat by adding more or less hot sauce or honey. Keep buffalo chicken separate from fresh veggies until serving to maintain crispness. Sauce can be warmed with a splash of water or lemon juice if thickened after chilling.
