  • 1 large rustic loaf or sourdough bread (about 1 lb; round or oval, day-old preferred)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup unsalted butter, melted
  • 45 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, minced (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and allow it to heat for about 10 minutes.
  2. Place the loaf on a cutting board. Using a serrated knife, cut the bread in a criss-cross pattern, making slices about 1 inch apart in both directions, but do not cut all the way through—leave about 1/2 inch at the bottom.
  3. In a small bowl, mix together the melted butter, minced garlic, chopped parsley, rosemary (if using), salt, black pepper, and red pepper flakes until well combined.
  4. Carefully open up the cuts in the bread. Use a spoon or pastry brush to drizzle and dab the garlic herb butter into all the crevices.
  5. Stuff the shredded mozzarella and cheddar cheese evenly into the cuts, pressing the cheese down into the bread.
  6. Place the stuffed loaf on a baking sheet or oven-safe skillet. Wrap the loaf loosely with aluminum foil.
  7. Bake for 15 minutes covered with foil.
  8. Remove the foil and bake for another 10–12 minutes, until the cheese is fully melted and the top is golden and bubbly.
  9. Let the bread cool for 5 minutes before serving. Serve warm and enjoy!

Notes

Use day-old bread for best texture and easier slicing. Grate your own cheese for optimal melt. For a gluten-free or dairy-free version, substitute with gluten-free bread and vegan cheese/butter. Assemble ahead and bake just before serving for convenience. If the bread browns too quickly, tent with foil. Serve warm for the best gooey texture.
